Andre Jaccard's Lesson # 1 - Mechanical Meat Tenderization

  1. Who invented mechanical tenderization of meat?  Andre Jaccard; founder of Jaccard Corporation, is widely credited with introducing the process of mechanical tenderizer to the United States.
  2. What is a mechanical meat tenderizer?  A mechanical meat tenderizer utilizes a series of razor sharp knives (see diagram below) to surgically cut the meat’s “connective tissue”, thereby making any cut of meat “butter tender”.  
  3. Are mechanical meat tenderizers the same as meat mallets or hammers?  No.  While a meat mallet can breakdown the connective tissues on the top surface of the meat, it does not penetrate far enough into the meat to cut the many connective tissue structures below the surface.
  4. What is the “connective tissue” of meat?  Collagen is the protein that makes up connective tissues such as tendons and ligaments. It is an incredibly tough stuff and if meat has too much collagen, it will be tough and hard to eat.
  5. What are the benefits of mechanical tenderization?  (a) Makes any cut of meat “butter tender”, (b)  stimulates quicker & more complete penetration of marinades and rubs, (c)  reduces cooking times by up to 40% & eliminates need to par boil poultry, (d)  promotes even / thorough cooking throughout meat regardless of uneven thickness or low / high spots and   (e)  reduces shrinkage of meat during cooking.
  6. Isn’t this the same as stabbing the meat with a fork?  No.  Think of a piece of rope and the difference between pushing a nail through the rope stands and pushing a razor sharp knife through the strands.  A nail will find a path through the rope without cutting the strands.  A knife will slice the strands.

    I have been using the Jaccard tenderizer for years on deer and wild turkey. It makes every steak so tender you can cut it with a butter knife. We have used it several times on venison from big, old bucks, and the result is always the same — tender steaks that my whole family enjoys. Buying this tenderizer was a fantastic investment!

    As an avid deer hunter, I would typically only use the backstraps and tenderloin for steak. After trying this product, even the tougher cuts are so tender that I am saving many more cuts for the grill. Plus, the marinade penetrates throughout the steak in minutes, not hours. This is the perfect tenderizer for those that like wild game meats. Thank Jaccard!

    The Jaccard meat tenderizer is as valuable Kitchen tool as a cook could ask for when Preparing meat. If you prepare meat, under Any circumstances, you absolutely need to Be using the Jaccard. Thousands and Thousands of my steaks have seen the Blades of my Jaccard before being Devoured by blown away customers.

    My parents own one of these tenderizers, and recommended it to me. I purchased one and absolutely love it. It tenderizes better than the "hole" type tenderizers or the mallet! My most recent purchase was actually for a friend, who also loves it and can't believe how well it works at making everything tender. The "blade" tenderizing just seems to work so much better, and it takes less time to marinate and cook. It is worth the money, plus it's easy to clean because it's dishwasher safe.

    Rating Meat tenderizer that works without chemicals
    I brought this to tenderize elk and bison. It works very well! We had tried traditional marinades and techniques, but this make a tough piece of meat slice and chew much easier!

    Wish I had known about the Jacquard meat tenderizer years ago. I eat a great deal of grass fed beef and elk/deer. With the game even the ground meat was tough. Now that I'm using the Jacquard Meat Tenderizer I can enjoy not only the taste but also the texture. It also helps the meat accept marinades. I will never be without this invaluable kitchen tool

    Rating Every kitchen should have one
    My uncle, a restauranteur, gave me a Jaccard as a wedding gift 15 years ago. My wife and I have used it more-or-less on every piece of meat we've cooked since then. It's amazing - gives chuck steak the consistency of filet mignon, and makes eye fillet that slices like butter. Perfect for instantly marinating meat that you would otherwise leave in the fridge for hours. Lasts forever too, the only reason we had to order a replacement was because I foolishly loaned it to a friend who's a chef and now he can't live without it! So he bought me a new one, shipped quickly halfway around the world and we are back in business. This is probably the best chef secret I've ever come across. Do yourself a favor.
