Andre Jaccard's Lesson # 1 - Mechanical Meat Tenderization

  1. Who invented mechanical tenderization of meat?  Andre Jaccard; founder of Jaccard Corporation, is widely credited with introducing the process of mechanical tenderizer to the United States
  2. What is a mechanical meat tenderizer?  A mechanical meat tenderizer utilizes a series of razor sharp knives (see diagram below) to surgically cut the meat’s “connective tissue”, thereby making any cut of meat “butter tender”.  
  3. Are mechanical meat tenderizers the same as meat mallets or hammers?  No.  While a meat mallet can breakdown the connective tissues on the top surface of the meat, it does not penetrate far enough into the meat to cut the many connective tissue structures below the surface.
  4. What is the “connective tissue” of meat?  Collagen is the protein that makes up connective tissues such as tendons and ligaments. It is an incredibly tough stuff and if meat has too much collagen it will be tough and hard to eat.
  5. What are the benefits of mechanical tenderization?  (a) Makes any cut of meat “butter tender”, (b)  stimulates quicker & more complete penetration of marinades and rubs, (c)  reduces cooking times by up to 40% & eliminates need to par boil poultry, (d)  promotes even / thorough cooking throughout meat regardless of uneven thickness or low / high spots and   (e)  reduces shrinkage of meat during cooking.
  6. Isn’t this the same as stabbing the meat with a fork?  No.  Think of a piece of rope and the difference between pushing a nail through the rope stands and pushing a razor sharp knife through the strands.  A nail will find a path through the rope without cutting the strands.  A knife will slice the strands.

We use this tenderizer on brisket, tri-tip, flat iron steak, flank steak and ordinary chuck roasts, as well as pork shoulders and butts. Especially good for marinating before smoking beef brisket and tri-tip. I saw the review about how someone found the cartridge was hard to get out and the blades got bent, but I have had NO PROBLEMS with cleaning the cartridge. This tenderizer works perfectly as advertised. My son runs a BBQ catering business in San Jose, CA, and he uses this every day/all day.

My husband's niece told me about the Jaccard meat tenderizer. When it arrived, I used it on flank steak. Never has flank steak. It's very easy to use and clean.

In my experience, venison is not tender, not even the backstrap. I took out my last package of backstraps, used this tenderizer on them, marinated them for a couple hours, cooked them medium rare with my sous vide, then brazed them in a skillet under very high heat. They were delicious and melt in your mouth tender. With this product, I'm certain that you could take a chuck steak and transform it into a tenderloin. That will be my next experiment.

first introduced in a professional scenario many years back, I finally purchased a tenderizer for my own. I am actually considering approaching the company regarding becoming a distributer/demonstrator. jacquards are not readily accessible in the common market missing much important exposure. Contemplating the purchase of their vacuum marinater.

Rating Very Impressed - Tenderizing without waiting
What a product! I bought this Jaccard to tenderize grass fed beef which is leaner and can be not as tender as grain fed beef, nothing more to say than the Jaccard WORKS. Beef, chicken, and pork all tenderize easily with 2 or 3 passes with the 45 knife meat tenderizer. I recommend and not use all the time for grilling whatever. One thing I found was now I do not need to marinade if I season before using the Jaccard as the knifes push the seasoning into the meat which is great for adding flavor before cooking.Jaccard 45 knifes meat tenderizer is awsome and I highly recommend for anyone and any type of meat cooking.

This is an awesome product! The best manual meat tenderizer I have used. I purchased the "meat maximizer" for use with wild game & also sent one to my brother-in-law/hunting partner. Simple to use, disassemble, clean & store. It does a fantastic job quickly. I have found all the claims concerning this product to be true & would recommend it to anyone.
